    Hare Krisna dear devotees,
    please accept my humble obeisances.
    All Glories to Srila Prabhupada!

Please could someone tell me the exact information on what preparation should one eat on the festivals like Nrsimha ceturdasi and similar after breaking the fasting ( ekadasi or non ekadasi). Or maybe also what Srila Praphupada said about that. Thank You very much. Haribol!!

I heard Narasimha Purana warns devotees not to eat grains on Narasimha Caturdasi, any actual quotes?

One verse from says from Narasimha Purana that even taking maha-prasadam on Narasimha Caturdasi is like eating stool. Sorry but I don't actually have the sanskrit quote. I did at one point but couldn't find it for you even after searching for ages.

I don't have full 14th ch. but these verses are about eating on Nrsimha Caturdasi (couldn't locate them in my edition of N. P.):

VARSE VARSE TU KARTAVYAM MAMA SANTUSTI KARANAM
MAHA GUHYAM IDAM SRESTHAM MANAVAI BHAVA BHIRU BHIH
VIJNAYA MAD DINAM YASTU LANGHAYET SA TU PAPA BHAK
EVAM JNATVA PRAKARTAVYAM MAD DINE VRATAM UTTAMAM
ANYATHA NARAKAM YATI YAVAT CANDRA DIVAKARAU

(HARI BHAKTI VILASA 14/415,416 from NRSINGHA PURANA Lord Nrsingha speaks to
    Prahlada Maharaja)

Oh Prahlada, on My day which falls on the fourteenth day of the light part of
the month of Vaisakha (April-May) one should fast. Those people who are afraid
of this material existence should fast every year on this most auspicious
fasting day of Mine. Any person, even though knowing about, he does not fast
on this day, he becomes implicated with sin. Knowing this, one should take a
vow to fast on My day. Otherwise, he will suffer in the hellish planets as
long as the sun and moon exist on this planet.

I think the question is more about what preparations (ekadashi or not) to honor after the fasting.
